Family night was a hit, as usual. Chris and Ralph hosted and it was a really sweet time of being together and intentionally catching up. Chris made a roast and scalloped potatoes and I brought a vegetable. It was, as usual, an experiment. I say "as usual" because I feel like I'm ever building a repertoire of signature dishes, and I found one to add to that repertoire: roasted broccoli. YUM! Who knew vegetables could actually be enjoyable? I bought a big thing of broccoli florets at Costco with the intent to learn how to roast it. I found a great recipe online-- toss broc with olive oil, garlic, and a few squirts of lemon or lime juice, and spread on a cookie sheet. Roast at 450 degrees for about 10 minutes, then toss with some freshly grated parmesan and enjoy. It was a huge hit, at least to me. I also roasted some baby carrots-- 8 minutes in the micro to get them started, then toss with olive oil, garlic, and thyme, and then spread on cookie sheet at 450 for 10 minutes. They were quite tasty as well. I'll find the sources and give credit sometime soon.
And speaking of things I told you I'd do, I don't have that picture of Brad's and my hypothetical child which we took in a photobooth in Indy. I accidentally threw it away. How's that for a statement? I threw away our hypothetical child. I surely can't be trusted with a real one.
Below are some pics of the fun car after it was buffed. It remains a joy to us. We've put 500 miles on it in a week! Our after-dinner drives are simply divine with the sun setting and wind blowing our cares away.
